Vegan Cooking 101

So today was Day 2 of Week 2 for Insanity. It was Pure Cardio and just as bananas as he says it is. I didn’t keep up very well today. Not sure why, just tired I guess. I’m really sore this evening though so I guess that’s a good thing.

But more exciting was my evening spent at one of my favorite stores The Friendly City Food Co-op  where Rosemary and Justin Van Kleek from Sunberry Baking Company taught us a little bit about vegan cooking. I’ve mentioned before just how much I hate cooking, so this whole vegan thing has been a challenge for me. It also needs to pass the kid test and I’m lazy so I haven’t been doing a very good job. They gave us some great recipes with normal ingredients that they sell at the co-op and all of them were simply amazing. We had seitan bbq, coleslaw, macaroni and “cheese” and “ice cream”. It was a heavenly meal that anyone would have enjoyed even if bacon is their main dish every day. I have never been a huge coleslaw person and I seriously could have eaten the whole bowl.

Thankfully they gave us the recipes, and I picked up the ingredients I didn’t already have from the co-op and I’m excited to try them out on my kids and see what they think.

This sounds so damn good. One of these days I swear I’m gonna try making my own seitan!

@Lissa, it was all simply amazing and the first time I’ve ever had seitan! I can’t wait to see how my boys like it all.
